Normally, kombucha contains less than 0.5% ethanol, which classifies it as a non-alcoholic beverage. Older, more acidic kombucha might contain 1.0% or 1.5% alcohol.
In our Kombucha factory we only use food-grade glass fermenting containers, stainless steel utensils and only when bottling the use of plastic bottling equipment is used.
This is limited to an hour to prevent leaching unwanted and potentially toxic materials from equipment.
Rooibos Tea form part of our raw materials and give the Kombucha drink a lovely flavor.
Maintaining a correct pH is an important factor. Acidic conditions are favorable for the growth of the kombucha culture, and inhibit the growth of molds and bacteria.
